Good pasta, fresh spinach and tasty bacon are a great trio that, enriched with a few additions, will create an original dish. Keep it simple! That is why dishes prepared with a small amount of ingredients are the essence of many of the most delicious cuisines in the world. Their main secret is good quality products and the passion with which we prepare our dishes.

This is what this pasta is like. Very simple and quick to prepare. It looks beautiful, which makes it a great proposition for a weekend dinner for your guests. But it will also be a perfect option for busy people who want to eat quickly, tasty, and healthy in their own home, in the middle of a busy week.

 

Ingredients:

  • CRISPY BACON SLICES - 10-12 slices
  • pappardelle (wide ribbons) - 400 g
  • spinach leaves - 200-300 g
  • hazelnuts - approx. 20 pcs.
  • garlic - 4 cloves
  • Parmesan cheese - 30-40 g
  • olive oil - 4 tbsp.
  • lemon juice - 2 tbsp.
  • fresh herb leaves - a little 
  • chili pepper - a little 
  • salt and pepper 

How to prepare a home-made pasta with spinach and bacon?

  • cook the pasta al dente according to the instructions on the package, and while cooking, prepare the remaining ingredients
  • put the bacon slices in one layer in a pan, add one clove of garlic cut into thin slices and heat until the bacon is golden brown
  • when the bacon already is in the pan, it's time to prepare the spinach pesto; rinse the spinach in cold water and put it in the blender container
  • add hazelnuts, cheese, remaining garlic, olive oil, lemon juice and blend into a smooth and quite thin paste; pesto should be ready after several seconds of blending
  • when the bacon and the garlic is light brown, add the pasta and almost all the spinach pesto into the pan (leave a little to serve)
  • very gently, but thoroughly stir the whole ingredients so that pasta is completely covered with green pesto
  • you can heat the whole dish for about 1 minute over low heat
  • serve the hot pasta with about three strips of browned bacon for each serving
  • each portion of pasta can be sprinkled with freshly ground black pepper and coarsely grated Parmesan cheese, then garnish with finely chopped red chili peppers and fresh herb leaves (e.g., mint or basil)
